Agar-agar is extracted from red algae Agarophytas, mainly from Gelidium and Gracilaria species, giving agars with different characteristics and qualities. Formerly in Japan, the agar was obtained only from algae Gelidium (Tengusa in Japanese), but at the end of c. XIX, because of the large global consumption, it was the first time produced from another type of algae, primarily Gracilaria. The final result was an agar-agar with different characteristics. Gelidium agar need not undergo any chemical transformation in the extraction process, unlike the agar of Gracilaria
, which is subjected to strong alkaline treatment.
Currently, worldwide there are higher amounts of agar-agar produced from Gracilaria, especially after achieving that the intensive cultivation of the algae were successfully established in Chile, Indonesia and China, among other countries. Gelidium algae can exceed 25 cm in length. It grows on the coasts of Japan, Spain, Portugal, Morocco, Korea, and Baja California (USA). It is in the Cantabrian coast where people develop their best cultivation, especially in places most exposed to waves. It grows on rocks in coastal areas, permanently submerged or at the lowest levels of the areas uncovered by the tides. These algae can not be cultivated and only what the sea offers is collected
