Tomato salad with agar-agar mozarella

Ingredients

(4 servings)

4 g Pronagar®
3 tomatoes
200 ml water
3 natural yoghurt
(or milk)
100 ml soy milk
Olive oil( Extra virgin
Basil
Salt and pepper
Balsamic Vinegar Cream

Preparation

1. Drain off the water from the yogurt for 10 minutes.

2. Sprinkle PRONAGAR ® as rain in the water and bring to boil. Cook for 2 minutes, stirring occasionally. Add a pinch of salt and pepper and remove from heat.

3. Add yoghurt and soy milk. Mix well.

4.Pour the mixture into a uniformly extended source (must have a height of about 1 cm). Cool.

5. When gelled, cut into circles the same diameter as the tomato.

6. Put a slice of tomato on top of the "mozzarella". Add salt and pepper. Garnish with basil and serve with a drizzle of olive oil and balsamic vinegar cream.
